December Cooking Day

Every month our Wellness Director Nicole hosts a cooking day for our Healthful Evolutions Members.  These are three Holiday Recipe ideas including raw desert balls, stuffed mushrooms, and a holiday stew.   All recipes are gluten free, grain free, oil free, AND plant based!  

Stuffed Mushrooms

Ingredients:

  • 1 can chickpeas
  • ½ onion chopped
  • 2 tbsp. tahini
  • ½ cup raw cashews
  • Collards
  • Thyme, Rose, Basil, paprika, oregano (to taste)
  • 3 Portobello mushrooms

Directions:

Pre-Heat oven to 350F. Add everything (except mushrooms) into a food processor and blend. Add stuffing to portobello mushrooms after removing gills. Bake for 15 minutes or until tender.

Holiday Stew

Ingredients:

  • 1 can coconut milk
  • 1 onion chopped
  • 4 garlic cloves
  • Juice of 1 lemon
  • 1 can chickpeas
  • 4 handfuls spinach
  • 2 handfuls kale
  • 1 packet mushrooms
  • 2 handfuls snap peas

Directions:

Cook onion for 5 minutes, add chickpea and garlic and cook on medium high for 3 minutes covered. Add greens slowly, add milk and allow the milk to thicken. Bring to a simmer then reduce heat for 10 minutes. The milk will thicken with time. For a stew consistency keep cooking! For more of a “soup feel,” cook less. Add lemon juice. Top with pomegranate seeds for an extra burst of flavor.

Raw Dessert Balls

Ingredients:

  • 1 cup almond milk
  • ¼ cup shaved coconut
  • 1 cup raspberries
  • 1 cup strawberries
  • ½ cup cacao
  • 6 tbsp. coconut nectar
  • 2 tsp maca
  • Pinch sea salt
  • 4 dates

Directions:

Add everything to blender and blend. Serve right away by drizzling over berries or stick in freezer for two hours, then scoop into balls. Keep refrigerated. Add flaxseed or chia seeds to increase thickness.
