Green Quinoa Dinner

Quick, easy, and tasty meal prep!


  • 2 cups uncooked Quinoa
  • 2 cups Water
  • 3 Garlic cloves
  • Veggie Broth (to cook the veggies in)
  • 3 small Onion
  • Asparagus (1 bunch)
  • Broccolini (1 bunch)
  • 3 cups Spinach
  • 1 Lemon


  1. Start boiling water and add quinoa, reduce to a simmer and cook for about 15-20 minutes.
  2. While the quinoa cooks, cut up garlic and set it aside.
  3. Cut up onions, asparagus, and broccolini up.
  4. Add onions, to a pan and cook in a splash veggie broth or water.
  5. Add garlic after cooking for a couple of minutes.
  6. Combine quinoa with onions and garlic.
  7. Boil asparagus and broccolini
  8. Add spinach to the pan at the very end and cook for a couple of minutes.
  9. Strain veggies
  10. Squeeze half a lemon to veggies
  11. Combine with quinoa mix and enjoy!
