<h2><strong><span class="header2">Savory Steel Cut Oats</span></strong></h2>
<div>Have you ever tried savory oatmeal before? This week&#8217;s cooking class consisted of beautiful greens and veggies from the farmers market, Nicole&#8217;s famous <a href="https://www.wellnesstraininginstitute.com/blog/2017/06/14/nicoles-cheese-sauce">vegan cheese sauce</a>, and a savory twist with delicious vegetables and spices added to steel cut oats. In class, we added the cheese sauce into the steel cut oats and it was delicious! Check out the recipe below:</div>
<h4><span class="header3">Ingredients:</span></h4>
<div>
<div>-1 cup gluten-free steel cut oats</div>
<div>-3 cups water</div>
<div>-3 cups button mushrooms</div>
<div>-1 large white onion</div>
<div>&#8211; 4 bell peppers</div>
<div>-1 head kale</div>
<div>-2 tablespoon oregano, paprika, thyme, rosemary</div>
<h4> <span class="header3">Directions:</span></h4>
<div>&#8211; Add water into a large pan and bring to a boil.</div>
<div>&#8211; Add oatmeal, allow it to come back to a boil and then reduce heat, cook for 15-20 minutes, or to desired softness. </div>
<div>&#8211; While oatmeal is cooking, cut up peppers, onions, and mushrooms.</div>
<div>&#8211; Add only the onions and mushrooms into a separate pan and saute in vegetable broth over medium-high heat for about 15-18 minutes, or until cooked. Stir frequently, and add more broth as needed. </div>
<div>&#8211;  Once your onions and mushrooms are cooked you can add that into the oatmeal.</div>
<div>&#8211; Cook peppers over medium-high heat for 3-4 minutes in vegetable broth.</div>
<div>&#8211; Add peppers into oatmeal.</div>
<div>&#8211; Cut kale up and steam over medium-high heat for 3-4 minutes.</div>
<div>&#8211; Add kale into oatmeal.</div>
<div>&#8211; Add oregano, paprika, thyme, and rosemary to taste.</div>

<p>Nicole likes to buy all of her veggies from the farmers market when it is the right time of year. This cooking day she was able to buy a plethora of leafy green vegetables, peppers, onions, mushrooms and other great miscellaneous items! Remember, buying local is best and organic is next best. You can always talk to the farmers who grew the food at the farmers market to see how their food was grown also 🙂</p>

<p><strong>Cheesy Potatoes</strong></p>



<p>This recipe was inspired by our Wellness Director Nicole&#8217;s favorite holiday dish growing up&#8230; cheesy potatoes! &nbsp;She created this delicious dairy-free version of the classic dish, try it out for your next party or holiday!</p>



<p><strong>Ingredients</strong></p>



<p>&#8211; 5 white potatoes</p>



<p>&#8211; 1 large yellow onion, chopped</p>



<p>&#8211; 1 ½ cup vegetable broth (low-sodium)</p>



<p>&#8211; 1 package of organic tempeh</p>



<p>&#8211; 1 tbsp. liquid aminos</p>



<p>&#8211; 1 lemon (juiced)</p>



<p>&#8211; ½ cup cashews, soaked 6-8 hours or overnight</p>



<p>&#8211; 2 tablespoons nutritional yeast</p>



<p><strong>Directions</strong></p>



<p>&#8211; Pre-Heat oven to 350F.</p>



<p>&#8211; Heat a large pot of water, and boil 5 potatoes (set timer for 20 minutes)</p>



<p>&#8211; Heat a saucepan on medium low in ½ cup vegetable broth, and add onions. &nbsp;Cook for about 15 minutes.</p>



<p>&#8211; Cut the tempeh into lengthwise slices, add to a separate saucepan. Heat saucepan on medium low with ½ cup vegetable broth, and 1 tsp. liquid aminos, cook on medium low for about 5 minutes.</p>



<p>&#8211; Once potatoes are cooked through, chop into approx. 1 inch cubes &amp; add to a casserole pan.</p>



<p>&#8211; <em>For cheese sauce:</em> Blend cashews, lemon juice, ½ cup vegetable broth, 1 tablespoon dijon mustard, and nutritional yeast in a food processor (add more broth if needed to thin, or more cashews to thicken).</p>



<p>&#8211; After onions have been cooking for about 15 minutes add on top of the potatoes, then add in tempeh. Pour the cheese sauce on top.</p>



<p>&#8211; Bake on 350F for 15 minutes. &nbsp;Check potatoes with a fork to make sure they are cooked through.</p>



<p>*You could also add sauteed kale to this.</p>

<p>&#8211; 3/4 cup cashews (soaked for 6-8 hours or overnight)</p>



<p>&#8211; 2 garlic cloves</p>



<p>&#8211; 1/2 cup nutritional yeast</p>



<p>&#8211; 1 tsp. dijon mustard</p>



<p>&#8211; 1/2 lemon (squeezed)</p>



<p>Blend in a food processor to desired texture &amp; enjoy!</p>
