<p>Quick, easy, and tasty meal prep!</p>



<p>Ingredients:</p>



<ul class="wp-block-list">
<li>2 cups uncooked Quinoa</li>



<li>2 cups Water</li>



<li>3 Garlic cloves</li>



<li>Veggie Broth (to cook the veggies in)</li>



<li>3 small Onion</li>



<li>Asparagus (1 bunch)</li>



<li>Broccolini (1 bunch)</li>



<li>3 cups Spinach</li>



<li>1 Lemon</li>
</ul>



<p>Directions:</p>



<ol class="wp-block-list">
<li>Start boiling water and add quinoa, reduce to a simmer and cook for about 15-20 minutes.</li>



<li>While the quinoa cooks, cut up garlic and set it aside.</li>



<li>Cut up onions, asparagus, and broccolini up.</li>



<li>Add onions, to a pan and cook in a splash veggie broth or water.</li>



<li>Add garlic after cooking for a couple of minutes.</li>



<li>Combine quinoa with onions and garlic.</li>



<li>Boil asparagus and broccolini</li>



<li>Add spinach to the pan at the very end and cook for a couple of minutes.</li>



<li>Strain veggies</li>



<li>Squeeze half a lemon to veggies</li>



<li>Combine with quinoa mix and enjoy!</li>
